Study on the Evaluation Method of Texture Property of Milk Sugar

Abstract: The correlation between sensory evaluation indexes and texture analyzer measurement indexes of different brands of milk candy sold in Shanghai was studied. Studies have shown that the elasticity, privateness, cohesiveness, chewability, resilience, and hardness indexes of the toffee measured by the texture analyzer are closely related to the hardness, drilling, chewability, elasticity, and comprehensive score of the sensory evaluation. It provides a theoretical basis for quantitatively expressing the sensory quality of toffee using texture analyzer.
